I have the ingredients listed, but when I made this up, it was one of those "a little of this and some of that) - in other words, my usual cooking method

Shredded bagged cole slaw mix, about half the bag
1 small heart of romaine shredded into bite- sized pieces
1 kiwi, peeled and sliced thin
1 orange bell pepper, coarsely chopped
1 cup or so fresh red raspberries
2-3 boneless, skinless chicken breasts, cooked and cut into small pieces
1-2 cups chopped fresh celery
3-4 chopped green onions
1 red onion sliced
1 large or 2 small granny smith apples, cored, wedged dipped in lemon juice to prevent browning
1/2 bunch fresh cilantro chopped
1/2 - 1 cup walnuts
1/2 - 1 cup shelled pine nuts
1 - 1-1/2 cups Welch's mixed dried fruit
1 Cubanelle ( or Anaheim or similar) pepper chopped

mix/toss together in large salad bowl
I used a poppy-seeded dressing with this - not too much or you'll mask the flavors

adjust quantities to your liking - some of mine were actually more like a handful of this etc....

Again, if you have other peppers, (like greeks or bananas) etc. - use them. I liked the crunch and tart from the apples with the soft and sweet from the fruit.......

WOW! Now that's a salad! I'll have to add a few more things to my grocery list!

What kind of poppy seed dressing do you use? I bought the Kraft and I don't like it. Poppy Seed is THE perfect choice for this salad, you need to submit this to some contest! And of course, split the winnings with all of us, or take us on a cruise....

wife's always giving me grief because I start with some of this and some of that, it turns out good, but then I sometimes don't remember exactly what-all I used....lol

and yes, it was the Kraft one - didn't use TOO much, (probably because there wasn't much left), but it wasn't too bad...thinking Marie's might have one or one of the other brands -

Webbie - if you shop at Publix, let me know if you find a good one

You have got to try this dressing, it's Publix Premium Blush Wine Vinaigrette, it' so good I could drink it from a straw! I also bought the Champagne Vinaigrette but having tried it yet but I bet it is equally good! I did try the Kraft poppyseed again, I still don't like it, I'll be searching for another one! Any one else know of any? Jessicata?

webbie -

here is a recipe for a spinach/strawberry salad that ALSO uses a home-made poppyseed dressing - might be tasty

http://kosherfood.about.com/od/koshersa ... nstraw.htm

and another one with different ingredients:

let me know if you make either one
